Too much vitamin A dangerous

Don’t pop too many vitamin A supplements, because large amounts, particularly megadoses available from health-food stores, can be dangerous, the US government says in guidelines that update how much of certain nutrients should be consumed for good health. Men need 900 mg of vitamin A a day and women 700, says Tuesday’s report by the Institute of Medicine, which slightly lowers the ‘recommended daily allowance,’ or RDA, of the nutrient.

 

Never eat more than 3,000 mg a day, because such high levels can cause severe liver disease and, in pregnant women, birth defects, the panel concluded. Vitamin A is crucial for good vision, immune function and other bodily functions. In poor countries, vitamin A deficiency is a huge problem that blinds thousands. In the US, vitamin A deficiency is very rare, because Americans have so many foods chock full of the nutrient: meat, fish, eggs, vitamin-fortified breakfast cereals, and dark-coloured fruits and vegetables like oranges, carrots and spinach.

Dr. Tonniessen said the idea for golden rice came from the field in developing nations. He once asked plant breeders at the International Rice Research Institute in the Philippines what they would choose if they could have genetic engineers insert any gene in rice. The answer was a gene to make rice seeds produce the yellow pigment beta carotene, a trait they had not found in any rice variety and therefore could not propagate by traditional cross breeding.

 

Although beta carotene has no taste, researchers are concerned that consumers in Asia might not like the yellow color because whiteness is highly valued in rice. Still, they hope people will feed it to their children. The key to producing golden rice came from a scientific collaboration that began at a brainstorming session sponsored by the Rockefeller Foundation in New York, where Dr. Potrykus met Dr. Beyer, who had figured out how beta carotene was produced in daffodils by isolating the biochemical steps that make the flower yellow.

Dr. Ingo Potrykus, the German inventor of golden rice, was cited as saying he would like to send his seeds to poor people around the world at no charge, adding, “I would like to send a year ago. There are 3,500 children dying every day. I think we should not delay one day.” But golden rice has remained under lock and key since it was created more than a year ago. Meanwhile, the story says, Dr. Potrykus has struggled to free it from a complicated web of more than 70 patents and legal agreements covering items as diverse as DNA sequences and the techniques he and his colleagues used to insert new genes in the rice. He is also racing against an effort to pass legislation that could prohibit the export of genetically modified organisms from Switzerland.

 

The story goes on to say that if everything goes well, within two to three years, golden rice varieties will be made available free to farmers earning less than $10,000 a year from the crop, a figure far exceeding the average income of poor farmers. Farmers will also be able to save seeds from their crop for future plantings because rice is a self-pollinating plant that breeds true year after year. The story says that the free distribution of golden rice seeds and genetic materials will be guided by a humanitarian advisory board consisting of the inventors, Dr. Dubock, representatives from the countries where golden rice will be grown, and Dr. Gary Tonniessen of the Rockefeller Foundation in New York, which supported the golden rice research.

 

Dr. Tonniessen, who oversees grants to improve food supplies and nutrition worldwide, was cited as predicting that golden rice could serve as a model for arrangements to share proprietary biotechnology where it is needed most, adding that, “Golden rice is just one crop and one trait. The potential to improve the nutritional content of many crops in many ways is now technically feasible.”

Soybeans come to us from the Orient. During the Chou Dynasty (1134-246 BC) the soybean was designated one of the five sacred grains, along with barley, wheat, millet and rice. However, the pictograph for the soybean, which dates from earlier times, indicates that it was not first used as a food; for whereas the pictographs for the other four grains show the seed and stem structure of the plant, the pictograph for the soybean emphasizes the root structure. Agricultural literature of the period speaks frequently of the soybean and its use in crop rotation. Apparently the soy plant was initially used as a method of fixing nitrogen.

 

The soybean did not serve as a food until the discovery of fermentation techniques, sometime during the Chou Dynasty. Thus the first soy foods were fermented products like tempeh, natto, miso and shogu (soy or tamari sauce). At a later date, possibly in the 2nd century B.C., Chinese scientists discovered that a puree of cooked soybeans could be precipitated with calcium sulfate or magnesium sulfate (plaster of Paris or Epsom salts) to make a smooth pale curd -tofu or bean curd. The use of fermented and precipitated soy products soon spread to other parts of the Orient, notably Japan and Indonesia. Although the highly flavored fermented products have elicited greater interest among scientists and epicures, it is the bland precipitated products that are most frequently used, accounting for approximately 90% of the processed soybeans consumed in Asia today. The increased reliance on bean curd as a source of protein, which occurred between 700 A. D. and the present time, has not necessarily been a beneficial change for the populations of the Orient and Southeast Asia.

What are vitamins?

Vitamin D, sometimes called the “sunshine vitamin,” is necessary for the proper absorption and use of calcium. If the skin is exposed even minimally to ultraviolet radiation, the body can produce this vitamin from a derivative of cholesterol in the skin. Unless you are a total shut-in, or live in a basement, or in the far north during the winter, you do not need to take supplemental vitamin D, even if you are not eating the usual dietary sources of it (egg yolks, butter, fortified milk, fish livers). Growing children on vegetarian diets may need additional vitamin D, particularly during the winter.

 

Some people with chronic diseases and disorders of calcium metabolism may also need it, but medical tests are required to confirm the need and determine the correct dose. Usually 400 IU is sufficient, and it is possible to find this dose combined with calcium. If you are healthy, eat a varied diet, and spend any time in the sun, you should not have to take supplementary vitamin D. Vitamin E, in addition to being a powerful antioxidant, is a natural anticoagulant that offers some protection against heart attacks and thrombotic strokes. I also find it useful as a treatment for a number of female disorders, including fibrocystic breast disease, PMS, and painful or excessive menstruation. It is not toxic, even in megadoses. Applied topically, it reduces scar formation following surgery, burns, or other skin injuries. (Do not apply it until wounds have closed.)

Never use ordinary niacin; use only the inositol-bound form; (2) never use time-release forms of niacin; they are more likely to be toxic; (3) do not exceed 1000 milligrams three times a day; (4) have liver function tests done before the start of therapy and at intervals during it, and stop the therapy if test results are abnormal; (5) discontinue niacin if nausea or any other gastrointestinal symptoms appear; (6) monitor serum cholesterol at monthly intervals, and reduce the dose of niacin to the lowest possible level to maintain improvement.

 

Do not take high doses of niacin if you are pregnant or if you have ulcers, gout, diabetes, gallbladder disease, liver disease, or have had a recent heart attack. You will often see niacinamide, a closely related substance, on shelves next to niacin. Niacinamide has the same vitamin activity but does not cause flushing. However, it is ineffective for the treatment of circulatory problems or elevated cholesterol. Do not use it.

Interactions Anticonvulsant drugs such as phenytoin and phenobarbital, aspirin, cholestyramine, chloramphenicol, estrogen, colchicine, antacids, methotrexate, anti tuberculosis drugs, trimethoprim, corticosteroid drugs, cigarettes and alcohol can raise folic acid requirements.
